Vanilla Bean Ice Cream INGREDIENTS: yolks 7 large egg 3 / 4 cup sugar Dash of salt 1 vanilla bean 2 cups half and half 1 1 / 2 cup cream Heavy PREPARATION: Whisk egg yolks with sugar and salt in large bowl and set aside. Split vanilla bean lengthwise and scrape seeds. Combine beans, seeds, half & half and cream in a large saucepan. Bring just to simmer. Gradually whisk the hot cream mixture into the egg yolk. Bring the mixture to the saucepan and cook over medium heat, stirring constantly, until mixture thickens and coats the back of a spoon (do not boil). Pass through sieve into large bowl. Refrigerate until well chilled. Freeze the ice maker as directed Manufacturer. Makes about 1 liter. Ice Cream Maker Recipe: Vanilla Ice Cream INGREDIENTS: 3 cups milk 2 3 / 4 cups sugar 3 / 4 c. tea salt 3 cups half and half 2 tablespoons vanilla extract 6 cups whipping cream Preparation: Scald milk until bubbles form around edge the mold. Remove from heat and add sugar and salt, stir until dissolved. Add half and half, vanilla extract and whipping cream. Cover and refrigerate. Freeze according to manufacturer's instructions or see "How To Use A Rival Ice Cream Maker. For low fat recipes and less Discount: You can substitute whole milk for half and half, and canned evaporated skim milk for whipping cream. Makes enough for a manufacturer 6 quarts of ice cream.
